I run a small group of hotels in Austria, three properties. I keep a spreadsheet of every piece of software we use across all of them: where the company is based, who funds them, where the data goes. When I make a technology choice, it rolls out to every property. That makes the stakes higher than they'd be for a single hotel. I think European hotels should use European software where it exists. Not because I'm sentimental about it, but because every subscription you pay is money leaving or staying in the European tech ecosystem. That matters more than most hoteliers realise, and it'll matter even more in five years.
